Rendering by definition implies the splitting of most of the oil fraction from the solids portion of offal proteinaceous materials. When the oil content is insufficient to require removal then technically the process adopted is drying. Rendering as a term does not distinguish between the various techniques used. Nevertheless those options do impact on the environmental, microbiological, nutritional, versatility and cost effective qualities of the procedure. Traditional processing of offal has generally involved the separation of a proportion of the fat, and sometimes water, from the protein rich fraction before drying. This is what is called wet rendering. The separation of liquids requires centrifugal separation equipment. Waste water from such systems (stickwater) is polluting and may require to be treated to an acceptable level for discharge, or to evaporate. Once evaporated the concentrated can be fed into the dehydrator. |
